Nacho Cheese Compendium
Nick's First draft
1/4 lb butter
1 cup heavy cream
3/4 lb grated Cheddar
1/4 lb grated Jack
1/4 to 1/2 cup diced chiles
Sauce 1
Ingredients
* 3 T.. butter
* 2 T. corn starch
* 1 C. milk
* 2 oz. cream cheese, cubed
* 2 C. sharp cheddar cheese, shredded
* œ C. Monterey jack, shredded
* 3 tsp. Emerils green sauce
* 3 T. Chopped pickled jalapenos, more or less depending what you like
* œ tsp. paprika
Directions
# In a small saucepan over low-med heat, melt butter and stir in corn
starch. # Pour in the milk, add cream cheese, and continue to stir
until mixture is fully blended. # While stirring mix in cheddar and
jack cheeses, paprika, and pepper sauce. # Continue to stir until
cheese has melted and all ingredients are well blended. # Add jalapenos
and stir. # Pour over tortilla chips.
Disney Dip clone
Ingredients
* 1/2 pound provolone cheese, grated
* 1/2 pound American cheese, grated
* 3/4 cup Heavy cream
* 8 ounces Cream cheese
* 1/4 teaspoon Garlic powder
* 3/4 teaspoon Worcestershire
* 1/8 teaspoon Cayenne
* 1/8 teaspoon Yellow food coloring
Directions
# Melt provolone in top of double boiler over boiling water.
# Add American cheese and stir in cream.
# Add cream cheese and stir until all is melted.
# Remove from heat; whip in seasonings and food coloring.
# Transfer to crockpot, and keep warm on lowest setting.
# Serve warm with crackers, chips, or vegs.

pepper sauce will do. We recommend anything with a "use with descretion"

1/4 tsp. paprika
