I have some cheese I don't like.

As much as I like Belgian beer, I find the Chimay cheese very
bitter/astringent. The ones I had may have been bad. They are
trypically eashed rind cheese (think limnburger) and I have an odd
condition that makes certain normal foods taste really nasty - or at
least different. Tahini, for example, makes me heave when it
touches my tongue. But when mixed into hummus, tastes like a smoked
feta cheese.

I've never had Chimay. Can't remember what Tahini is. I like Limburger.

I've never had Chimay. Can't remember what Tahini is. I like Limburger.
Tqahini isn't really cheese unless it's pressed into something
called "Havala". And even then it isn't cheese.

Tahini and havala are forms of sesame paste. My bad. It's not
cheese.

ObCheese: I just had a quessadilla with havarti and dry manchego.
With dijon mustard and bread and butter pickles.

That sounds good, Steve. Havarti is Danish mozzarella, eh? Was the manchego

Manchego was Spanish style, leftover from the American Cheese
Society's annual conference here in Austin 5-6 months ago. It's the
only cheese left, and still going strong. It was probably a 2.5lb
block, now shaved down to a 1-pound block.

Beer was Leffe Blonde.
