Seymour Dairy Products. The "Ader Kase Reserve" will rival Cashel
Blue (From Ireland) at 1/3rd the price. I just bought a small
sample, 1/4lb to try, and I'll probably go back tomorrow and get a
pound. It was only $7.95 - outstanding price for an awesome
cheese.

This is the new "Best American Blue Cheese" by far. And at $8/lb
I almost feel it's mis-priced).

(Austinites: HEB Brodie has it near the the cooking demo station.
Let me know if you see it at any other HEB's)

It's amazing how the same 5 ingredients in approximately the same
proportions can produce thousands of different cheeses.

Plenty at Hancock Center. As well as their Gorgonzola (untried).
The batch at Hancock isn't as mature as the stuff I got from
Brodie, but still worth checking out.
