I recently got a big block of cheese billed as "Dubliner cheese". It
claims to be a product of Ireland. It kinda looks and tastes like white
chedder, but a little harder and a hint of sweetness. I think it is
really good. Anyone eat this?

I think it's just another Cheddar clone trying to gain a repuation with a
distinctive branding exercise - tried it a few years ago and couldn't see
it was much different from all the Scottish, Irish, Canadian, New Zealand
and mass-produced "cheddars" out there. Credit where credit is due, though
- at least they don't call it "Irish Cheddar".
