I am currently doing an A-Level in Biology, for my coursework I am planning
on doing an investigation into the microbiology of cheese. I am currently
considering investigating the correlation between microbial content and
smelliness of cheese. Does anyone know what causes cheese to smell (ie what
chemical, produced by what process), if there is any correlation, or any
websites about cheese that may contain useful information?

the products of fungal action. Not sure where the other smells come from!

If you can do a literature search. Look for articles by Dr. MaryAnn
Drake at North Carolina State University (you may find some from her
Missisppi State days also).

Look in the Journal of Food Science (www.ift.org is the homepage) and/
or the Journal of Dairy Science (www.adsa.org). MaryAnn has used
other scientific journals to publish in and there are other authors
but this would be a good starting point. If you are doing your A
levels I assume you are in the UK or in a system like the UK. Look
for Food Science or Dairy Science departments at your local
Universities.
