I just purchased this cheese yesterday and tried it today. Excellent - very
soft, with a strong nose.

What is the story behind this variety? A google search didn't turn up much.

Maybe its a brand, or a manufacturer's coined name.

Any other info on the label?

Unfortunately no. It does say it's a washed rind cheese, though.

I have been able to find a web reference to it, which claims it is a
Stracchino cheese similar to Taleggio.

Paesanella is a brand name the cheese. I believe it is small MOZZARELLA.
