waaaaaaay too overpowering. Tried it with vintage 1985 port and it was just
awful. It wasn't a top of the line stilton or anything, imported from GB I
forget the brand. Standard stuff, apparently, I guess I just don't like
mold that much, though I like bleu cheese.

OTOH I tried gouda (pasteurized) recently and it was great. Tried year-old
super aged gouda and it was good too. Detest smoked gouda however.

I don't think so.. I tried it later and it was just too much. Too much for
me. I think that's a cheese one has to work up to.

I'll have to try some Stilton, now. Agree, blue cheeses by themselves
are pretty intense. I usually crumble the Gorgonzola into a no-lettuce
salad when in the mood for something rich.

crumbled on a salad Stilton might be nice. But just a slab of it.. yikes.

Anyway .. I'm going to be trying some new stuff as soon as I get my cheese
reference book out of storage. Going to go for something a little exotic.
Can anybody tell me of any online cheese shops that don't require a 'cheese
of the month' subscription to buy? And that are somewhat devoted to cheese
so I know I'm not just getting plastic wrapped frozen stuff?

I would say that is a good guess. We drink a lot of different wines
here but port is not on the list. Just cannot stand it at all. When
we lived in Ireland some of the better restaurants would have Cheese
Board on the dessert list. That would be my choice but before I would
ask if the Stilton had port added, a common thing. If it was then I
would pass. Try then again minus the port. I think you may change
your mind.

Hard to reply to a top posted message. Anyway what they would do is
scoop out the top of a stilton and fill it with port. Then let is sit
till it had soaked into the round.

Bottom posting is obsolete with threaded newsreader software such as Outlook
and Outlook Express. In fact it's more cumbersome because one has to scroll
to the bottom of a message one has already read umpteen times.

Anyway, actually no that's not how I had it.. just a hunk of stilton with a
glass (or three) of port next to it.

Can't agree with that. People read from the top down. Outhouse and
Outhouse Express have done more to corrupt Usenet and email posting
than any other program. One of the worst things is top posting and
not snipping a loooong post. Just love to read "Me too." followed by
five deep quote, 250 lines long. What are people like that thinking?

If people would learn the right way to post downloading time would be
much faster. A read of this link will help to get a good perspective

yeah I truly don't bother to snip. Life's too short and I post too much.
It bugs me when people bottom post because then I have to scroll past lines
of text I've already read.

Really? Try to build up to it with some other cheese before attacking
the Big S.

Port isn't always the best companion, though. A bit of hard bread works better.
