Dear all,

another tip, citric acid is difficult to get, unless you shop on the
Internet, but incl shipping it will kill you.
Go to a kosher store, and look/aks for " sour salt " Jewish people use
this a lot, it is pure yes..... " citric acid "
there you go , Ive got it at the Safeway store, kosher food section
for $ 1.50 ( 5 oz bottle).

We use it to make cheese, wine, and in sausage, so not really a
substitute, but the real thing, only with another name.

Try also a homebrew shop - I needed Tartaric acid a while ago, and they had
it.

Yes a lot of those ingredients are also used for brewing beer and
wine, thats why cheese and wine are so "close " to each other
