I'm almost out of my Pecorino Romano. What would be some good alternatives
to it and Parmigiano Reggiano? Thanks.

Manchego! Not as hard, but nice and nutty. They have an excellent
brand at CostCo (don't have the wrapper, but I always have a chunk
of it in the fridge next to the Peckerino and alternate between
them.

Thanks, Steve. It's added to the list. We hit Costco a lot, so that'll
prolly be foist.

Salata is a hard grating cheese. ;-/

Ricotta Salata really doesn't have much flavor, IMO. It's probably
only economical if you're in a area which produces excess whey; it's
not a real cheese, IMO.

I'm looking for the gratable gorgonzola.

None of the Ricottas are techically _real_ cheeses. I'm really looking at
that Grana Padano Stravecchio.

Just double wrap it in paper towels or cheesecloth and leave it on your
kitchen counter for a while. ;-D
