Can't seem to find any website telling you how to age your cheese
underground . Any suggestions on books , etc ? Not interest in cave age
cheese , but storing underground at your home .
Why do you want to do this?

Storing underground is only for temperature control in
semi-erratic climates without other means of climate control.
You can do better, even in Ohio.

Besides, you'd only fuck up your lawn.

ObCheese: I had some great Greek keflalogravieria this afternoon.
It's kinda like a sheep milk cotija. I'm gradually working my
way through the Mediterranean deli.

Give me some hints as to what i can do. I want to be able to age my
cheese and have room for more than one cheese. Books , websites ?
Get a dimchae (kimchi refrigerator - about $800 USD) or a wine
cooler. I don't know how well they control humidity, though. I
really don't know the requirements for making/aging cheese - I'm
just here for the finished product.
Are you from Ohio ?
Depends on how you define "from". I lived in Columbus Ohio for a
few years, as well as a bunch of other places. I just kinda sleep
around.
