What is the ideal Temp. for storing your cheese in a wine cooler ?
Should each rack be the same temperature ?
I have mine set at 51F. I only have a 24 bottle size so I don't worry
about the different racks.

What does a wine cooler have to do with "ideal temperature"?

The ideal temperature for aging cheese is about 55F. I think the
temperature has more to do with typical cave temperature than any magic
number based on biology.

People have been using caves for centuries and when someone invented
the thermometer, someone else took a cave temp and said this must be the
right temp because it works.

I thought a wine cooler was some sort of yuppie drink.

You can buy a dorm fridge for less than $100 and get a good deal of
cheese in it but what is the point unless you are making it?

Jack , The wine cooler is because is a refrigerator temperature
(average) is cooler than what is required by cheese.
I think you will find that the dorm fridges will maintain higher temps
that the usual kitchen type.
The ideal
temperature for cheese is not 55. Just from my research. The ideal
temperature is around 45.
Like I said, cheese has been kept in caves for millennia and 55 is the
typical cave temp.

Having said that, there really are several ideal temps to consider.
Cheese ripens most efficiently and consistently at about 55f. Once a
cheese is ripened and mature, the temp can be reduced to anything above
freezing and some cheeses don't even mind that.

In addition to all that, some cheeses such as Swiss/Emental must be
ripened at 70F for about 6 weeks.

I don't know what a wine cooler looks like but the dorm fridge works
very well for cheese. I have had one for years and it sits at 45 forever.
